Mizuna is also known as Japanese mustard. The Red mizuna with its purple stalks, is rich in a polyphenol named anthocyanin. It is said to have several benefits such as anti-oxidant effects (anti-ageing), that common mizuna doesn't have. The leaves are a bit bitter while the stalks are sweet. The thinnest stalks are even sweeter! Use in salads with the stalks. Leaves are delicious boiled.
