Delicious Beet & Orange Quinoa Salad

A nutritious fresh salad that is packed with nutrients, can be eaten throughout the week, and an easy meal to take on the go!

Ingredients

150 gr Quinoa

3 pieces of Beet

Salt

Pepper

Oil (your choice)

Vinegar

1 piece of Orange

Flat Parsley Quarters

You can add pieces of Walnuts and Feta cheese

Preparation

  • Cooking the quinoa:
  • Rinse the quinoa using a fine strainer.
  • Pour the quinoa into a saucepan and add 1.5 or 2 times its volume of water depending on whether you want it al dente or well cooked
  • Bring to a boil, then bring the heat lower and cook for 10 minutes
  • Remove from the heat and let it swell
  • Making the salad:
  • Cut the beets into cubes, then remove the quinoa from the refrigerator
  • Mix the beetroot and quinoa together
  • Add salt and pepper
  • Pour in the beet, then the oil
  • Taste, then correct if necessary
  • Add orange segments and a little flat-leaf parsley, chopped for taste
