Rejuvenating Butternut Ginger Soup

Ingredients

1 butternut

2 onions

2 potatoes

100 gr ginger

Quartered peanuts

Preparation

  • Peel the onions, then mince them then peel the potato and cut them into 2x2cm cubes
  • Remove the skin from the butternut and remove the seeds from the squash
  • Cut it into a cube of size 2cm by 2cm
  • In a large saucepan put oil or butter and blanch the onion over medium heat
  • Then when the onion is well blanched, add the butternut and the potato
  • Cook over medium heat and brown everything together for a nice color
  • Add 10 cl of white wine (optional)
  • Season with salt and pepper
  • Add the water to the height of the vegetables
  • As soon as the soup begins to boil, put the heat on low or on 2 for induction
  • Put a lid between open
  • Cook for 20 minutes
  • When you can pierce the potato and butternut with the tip of a knife, the soup is ready
  • Use a hand blender or anything you have to mix and mix everything
  • Season again with salt and pepper to taste
  • Then while the soup is still hot, peel 100gr of ginger, cut it into strips. Then put it in the soup as an infusion. After 15 minutes, taste and if the taste does not suit you, leave for another 10 minutes. Then remove the pieces of ginger
  • If your soup is too thick, add a little water and cream until you get the consistency you want
