Turnip Soup

The humble turnip is turned into a delicious soup with this recipe. A perfect dish for a chilly fall day or a wintery afternoon.

Ingredients

1 soup spoon full of maple syrup

2 onions

2 soup spoon of olive oil

5 turnips

Thyme

Salt

Pepper

Preparation

  • Peel the turnips and cut them into slices of the same diameter and thickness
  • In a saucepan filled with water, add the pieces of turnips and cook for 20 min until they are tender over low heat so as not to overcook the turnips
  • Peel the onions and chop them and strip the thyme
  • In a pan over high heat, caramelize the turnips and onions with olive oil and maple syrup
  • Salt and pepper to your liking
  • Stir the pan, shaking it so that the pieces of turnip caramelize on all sides
  • Add the thyme and mix it with the turnips
  • Deglaze with 1/2 glass of water and mix
