Energy is applied to refine the wheat, most of the bread has discarded the outside of the nutrient-retaining wheat. If you eat it as whole grain, it is good for your body and the environment. I am particular about whole grain flour. Also, considering transportation costs, we use raw materials that are as near as possible. Local production for local consumption! Our breads have deeper taste and higher health value since we make them with sourdough.
