The most delicious Shiitake mushrooms grow on sawtooth oak logs, which are famous for their sweet sap. Kyushu has the highest percentage of sawtooth oak trees. The three prefectures of Oita, Miyazaki, and Kumamoto produce 70% of the nation's dried Shiitake, and Takachiho-go, where our company is located, is in the middle. The delicious Forest-grown Shiitake can only be grown by families living deep in the mountains in harmony with nature in their forests. We support small-scale growers by buying all the dried Shiitake brought in by about 600 nearby producers for cash. We have been doing this for over 50 years, and we won the grand prize of the Sustainability Award 2020 by the Japanese government MAFF. Forest-grown Shiitake in Japan are originally grown without pesticides. Furthermore, we have developed a system to reduce contamination to zero, even insect eggs, without using chemicals. We are the first company in the world to receive Kosher certification for Forest-grown Shiitake. Recently, we have obtained JAS organic certification with enthusiastic producers' cooperation.
